I need to reset the information on the app based on my previous fitbit to set up my new one. Appreciate any assistance!

It is not necessary to do anything about data from previous tracker. If you set up your new tracker in the same account, you will still have all the old data, and your new data will just add on, the data not really caring what tracker it came from.
If, for some reason, you really do not want the old data there, the best way is to create a new account with a different email.
