I have had several issues with my Fitbit randomly deciding to stop recording exercise. For example, when I select walk and start walking. This has happened whether I wear long sleeved shirts or not; I saw a response that said long sleeved shirts can pause the exercise. So for a few days, I waited for the device to recognize the activity on its own. A 45 minute brisk walk gets recorded as .... just steps.
Why is it so hard to get exercise recognized? I realize I can go in and manually enter the walk, but why, when there are TWO ways for the device to calculate the walk does neither work?

@fanofpi Welcome to the Fitbit Community! It's great to have you here! Sorry for the delay in my reply.
Let me help you with your Inspire HR not recording your activities. For the issue about exiting the exercise mode try restarting your tracker by following these instructions.
Regarding the activities auto detection, your device detects activities based on the motion on your arm. The automatic detection is a feature called SmartTrack. For example when using the elliptical machine make sure you have the moving bars so your device detects the motion and records the activity itself, once an Elliptical activity is saved on your account it should show on the Recent Exercise area. If your heart rate is high but there isn't much motion (yoga, weight lifting, etc.) then these activities will be difficult to be detected by your device. Still you can manually log your activity so you have a record on your account.
Let me know how it goes.

I have restarted the device many times, but it has made no difference. I have followed the directions in this post. I keep the device clean. For extra exercise benefits, I always swing my arms as I walk, and it results in ---steps at least as often as exercise. If I start walk on the device, it locks up and returns to clock mode. I do not understand why, when there are TWO ways for Fitbit to record a walk, neither works.
I appreciate your response, but I sure would like to have it work consistently. The maps are a nice bonus -- when they work.
