Do I need to take my phone with me to see my gps route and if so do I need to have a WiFi connection?

Yes, your tracker uses the phones GPS.
As for WiFi, I don't see how the phone would stay connected to your homes WiFi when our for a walk, so yes you may turn this off.

In theory no. There are a few reports of a few phone models require a network connection for the gps to get connected. After which it may be disconnected..
I jave never experienced this.

No phone needs data a few phones want data enabled to setup the start of the data.
