If I know how far I walked on a treadmill or outside, why can I not enter that information into a tracked or auto-recognized exercise?

The field is there when you click edit, it's just not editable.

At this time this feature is not available but you can vote for the suggestion: SmartTrack to display distance for step-based activities.
