If you mean 'All-Day Sync', from phone app Account page, tap your tracker, then scroll down to 'All-Day Sync'.

thanks but I sync by computer, not by phone. after three months, much
searching, two failed chats and finally a call to fitbit, I talked to a guy
who understands my issue and he told me how to turn off bluetooth. I have
to turn it on to sync, then turn it back off when I want to use the
computer without having the fitbit autosync. Argh! but doable.
he said there's no way to turn off autosync on windows 10 and I believe him
because heaven knows I TRIED.
thanks for your response

When posters don't specify which app/sync device they are using, I generally assume phone app because that seems to be the most common, and if you don't tell me, my ESP is not very accurate.  The alternatives are to first ask what app you are using and then wait to see if I get a response, which tends to annoy someone in a rush for an answer, or to give several answers to fit phone app, Windows 10 app, fitbit.com dashboard, and I'm not going to go to that much work when so often people don't even give any notice they have read my reply.

I have no such option either.  Charge 2 and using an android.  Samsung 10e. No way to turn off all day sync.

From Why was the all-day sync option removed from the Fitbit app?

To improve your experience with notifications, syncing, and firmware updates, we removed the option to turn off all-day sync from the Fitbit app. When your phone is near your Fitbit device with Bluetooth turned on, it periodically syncs with the Fitbit app to update your stats and download available firmware updates. More frequent syncing rarely, if ever, noticeably decreases your device’s battery life.

This simply is not an option.

I find this comment to be condescending and very unhelpful.

It's ridiculous that the option was removed. Why not let each user decide? Also, when mot connected to the internet, synching will cause data usage.

Turn off all notifications and sync manually. You won't get notifications on challenges until you sync, but who cares? It extended my battery charge quite a bit to do this.
