250 steps is nothing.. but I can't find a way to increase it anywhere. Another bare-bones feature missing.

You cannot adjust that number. Although it is admittedly small in terms of daily steps for most, its purpose is to encourage not sitting still for hours at a time. Even getting up and walking around for a few minutes has health benefits in addition to getting a larger daily total.
