I’ve been using the GPS tracked Run function on my Inspire HR for the last 3 weeks, and have completed 12 or more runs of 30 minutes+ on flat terrain. My Cardio Fitness Score is however still showing as a range and hasn’t changed at all (it’s Very Good-Excellent, so no complaints!). When can I expect it to narrow down to a specific score/number? Or is there anything I should be doing differently?

Let me help you with your Cardio Fitness Score. There isn't a stated minimum amount of runs you need to do before you get a better or more specific reading. I suggest you try running for a shorter period (15 to 20 minutes) and see (after some runs) how the data is interpreted by the app.
