My fitbit wasn't syncing so I tried rebooting the fitbit, turning Bluetooth off and on, restarting the tablet, then I unpaired my fitbit from my tablet and now my tablet won't pair with the fitbit and often the tablet doesn't even see the fitbit at all.

Since you unpaired your Inspire 2 you need to re-pair it. To re-pair your Inspire 2 to your existing account follow these steps:
Open your Fitbit App, tap your profile picture then scroll down to and tap Set Up a Device. Pick Inspire 2 from the list then simply follow the on screen instructions.
