It's 8:17 right now, and I put the watch on at around 7:20 ish. Most of that time I've been lazing about on the bed. Went up and down the stairs a couple time to get some water and it's assuming my calories burned are 681 and steps taken at 215. Please let me know what's going wrong here

The steps don't sound unreasonable and I can explain the calories.
As well as tracking calories burned through activity your fitbit also tracks your BMR calories. These are the calories you burn just keeping your body alive (even when asleep). They are calculated from your profile settings for age, height, weight etc so you needn't be wearing your fitbit to get them. What you are seeing includes the total BMR calories burned since midnight

Is there any way option to remove the BMR calorie option? I'm not really interested in the calories burned passively, only worried about how much I burn via walking and excercsing in a day

No, I'm afraid you can't remove BMR calories (or even show them separately from the activity calories). Is it not better to include them in your burn totals anyway - you really do burn your BMR calories?
