I didn’t finish because it couldn’t sink because I had typed in the wrong fitbit but now I can’t use my email as it’s registered with the versa 2 even though it couldn’t complete the set up.

Log into app with you existing account with your email and say you want to add a device and it should let you replace the versa 2.
