What if you don't have a dominate hand?

I write with my right hand but use both for 90% of what I do. So how do you suggest I set the dominate hand? I live on a working ranch.

The dominant hand setting is to filter out some activities of your arm that might otherwise look like steps, such as brushing teeth brushing hair, etc.  I would consider the dominant hand whichever you think you do more such repetitive motions with.

The only thing is would affect is step count.  Use your judgement, or try it both ways and see which seems to give truer results.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
