I’ve looked everywhere in the app. Does anyone know where I can find my actual estimated cardio zone heart rate that the app is using to create the graphs?
thanks.

@jameslondon74 Tap on your profile picture to get to your Account page > scroll down to Heart Health > you will see your heart rate zones. This is the section where users can also set custom zones.

Have a look at this help file: https://help.fitbit.com/articles/en_US/Help_article/1565.htm?Highlight=heart%20rate
It calculates your maximum heart rate from 220 - your age and then uses this to calculate the zones:
Fat Burn: Between 50% and 69% of your maximum heart rate
Cardio: Between 70% and 84% of your maximum heart rate.
Peak: Greater than 85% of your maximum heart rate.

Where can I find the number that the app is using to create my cardio heart rate, so I don't have to do the math? Is it displayed anywhere in the app? It would be very helpful if there is a way to look this up whilst looking at the graphs to check against, rather than have to work this out for myself.

I'm not aware of it showing anywhere - you have to do the math

I'm sure I've seen it before - maybe while I was setting it up. It's very strange they would keep these numbers hidden.

Where is heart health? Is this a feature on fitbit inspire HR?

It depends what you mean by 'heart health'.
On the Inspire HR (which I have) you can choose Heart Rate and it will give you a heart rate report and score. Anything more and you might have to upgrade to Premium (which I don't have).
