The following is using an Inspired2 with the app (v3.69) on my Android. Some of my "exercise" is dog walking (a Hound walks and sniffs but not a steady pace) or leaf blowing. I found a "mow grass" exercise which was useful but editing "walk" to be anything other than a pre-existing exercise type doesn't work. Additionally, an auto-recognized exercise doesn't seem to have an edit button at all. Suggestion would be to allow exercise type to be user editable whether it was selected prior to activity or post activity (auto-recognized). An alternative suggestion would be to allow creation of activities in the list (if that table is size limited, allow deletion of unintersting activities).

Sounds like you are manually logging the activity after you are done. That overrides everything that Fitbit recorded by whatever parameters you input. It is more accurate to use the Exercise App on your wrist to record workout as it happens; use "Workout" if nothing quite fits.
