From reading it seems that step counting is paused while in some exercise modes, what happens if I need to stop exercising and I want my steps to count? Let's say I ride my bike 5 miles to the nearest Starbucks, pause my Fitbit, walk in, order, walk around to stretch out my legs, etc., get up on bike and restart my activity. Are my steps counted during pause mode?

It's great to see you around @Castra.
If you select "Run" from your Versa and then pause your exercise, your steps will continue to be counted. At the moment of syncing your watch and check the exercise, you will see how many steps you did during the exercise but it won't stop counting your steps.
