Just looking at buying a new Fitbit and like the look of the Versa. Do you still need your phone to be able to listen to Deezer as that is where my music is on my phone? Can I use it on the watch if the app is on the phone? Does this make sense?

Regarding your inquiry, no, you don't need your phone since with the Deezer app on Fitbit Ionic and Fitbit Versa, you can download your Deezer playlists and Flow directly to your watch. After you download music, connect Bluetooth headphones or speakers to listen to your music.
Note that you need a paid subscription to Deezer and a Wi-Fi connection to download music. For more information check the help article How do I listen to Deezer playlists on my Fitbit watch?. You can also check this page, where you will be able to compare all of our units.
