Support person on chat tried their best, but after 40 minutes of going through settings, uninstalling, re-installing, rebooting and restarting, nothing worked. I can reply to WhatsApp and Messenger but no amount of configuration would allow me to reply to text messages, either by quick reply or voice. The only options visible when an SMS presents itself on the Versa 2 screen are 'Mark as read', Open' (which opens the sms on the phone) or 'Clear'. I have an Oppo Reno Z running Android 11 which is up to date with all updates. Responding to text was a primary reason I purchased the Versa so now I am thinking I made the wrong choice ☹️
Anyone else has had this issue?

Ok, I'll post the answer I found in case someone else has the same issue:
The problem was the standard message application. I downloaded Textra and after a couple of settings, reply works flawlessly. I don't know if it is an interworking issue is with Fitbit or the message app itself but moving to Textra fixed it. Now, should Fitbit support should have been aware of this? Surely the issue cannot be unique to me and they should know more than the average customer. Sort of like going into a store and asking the consultant about a product.. and they read you what is written the box 😬
