Hi,
the app I’m using is the latest version 3.75, yet I’m unable to add card to my wallet, I’m constantly getting the error message “Your Fitbit device is in an unstable state. Please reboot your device.
If the problem persists, please contact Fitbit support”. Though I’ve rebooted couple of times, it didn’t fix the issue. Request you to please help.

This is odd and to work on this together may I know the model and OS version of your phone? Have you made sure your bank supports Fitbit Pay?
