Fitbit incorrectly showing my food intake as Under Budget?

Hey guys.
I got into the fitbit game over the summer and I haven't had any major issues ( I have a Versa 3). The past couple of days I've been waking up at 4am to get my self ready for work and I'm not understanding how the App/watch are making these calculations:

Calories burnt = 484 (resting, heart rate, while sleeping, makes sense)
Calories in upon waking up = 0 (makes sense because I haven't eaten anything)
Calories out = 2,003
Calories left in my budget = 1,798

So, the calories out is equaling 2,003 calories. The app wasn't showing that much when I was waking up around 7ish. It was close to the 800s or below.

My food plan is set to -1000
Prior to the removal of the website dashboard removal, I had my food intake set to sedentary.

I don't understand why the app is showing a massive difference in calories out.
Can anyhow help out? Also is there a way to change the sedentary/personalized setting now or is that not available anymore? I can't seem to find it on the new website layout.

I need help with changing back to sedentary meal plan too. Switched on me unexpectedly last week. I'm overeating because of this change and it looks like the defunct dashboard is the only way to change it?
