Last year I was frustrated by my Fitbit sowing the wrong time for days as we changed time zones but had no internet access or phone signal (at a sensible price). I will face this again in a few weeks when crossing the Atlantic and wondered if there is any genius way to keep my Fitbit in the right time zone while at sea for 5 days.

Not to my knowledge. 

You might want to contact Fitbit and ask if they have a solution.
