Will the fitbit versa2 automatically start recording my bike ride? If not how do I set it up to start recordingon the watch face.

Ideally it will auto-recognize your bike ride, but that is not always reliable as it requires recognizing the activity from just the movements of your wrist. The more reliable way to be sure it gets recorded as a bike ride is to use the Exercise App, telling it what you are doing and when you start and stop. It takes a bit more effort at first, but after using a few times, I think is well worth the effort. You can read more about it here: How do I track my workouts with my Fitbit device?
However, realize that even if it is not recognized as bike ride, it will all still count in your daily totals for calories burned, Zone Minutes, etc.
