How does my Versa2 track my energy or activity level any differently, when I select 'Exercise Golf' vs not selecting any 'Exercise' mode... when I'm at the driving range for 1.5 hrs? How about when I'm walking 18 holes? How about when I'm riding a cart for 18 holes?

The main purpose of recording an activity is to see your performance during a specific period of time. Your Fitbit Versa 2 will track the number of steps, heart rate, calories burned, floors climbed and distance traveled during the activity. Once you've synced, you'll be able to see in your Fitbit account how you did while you were playing golf. You can also compare your recent performance with your previous golf exercises.
