Does anyone know how to extend the backlight on my watch? I look at the clock and bam...the light goes off.

From clock screen, scroll right through apps to 'Settings'; within Settings, look for 'Screen Timeout'.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
