I have wicked Driftr wireless earbuds that seem to have the same problem as the air pods do (I can’t control the volume on my watch). If there is no fix for this, I have tried pairing/unpairing/turning off watch etc, which headphones will work with my Fitbit and allow me to control volume on my watch?

What about the jaybird ones? Does anyone have any experience with headphones that do work? I really want to run without my phone for music.

Thanks for the update @deberoons.
Some users have had success by placing their Fitbit devices on the other wrist. You might want to give it a try.
If it works, please make sure to change the wrist setting in your Fitbit account. For more information, please visit this article and open the menu "How do I change the wrist setting on my Fitbit device?".
Hope this helps.
