I have the new Versa.
Can you lock it so if any of the buttons are pressed, it does nothing?
When i wear it was my boxing gloves some buttons are pressed and the stop watch has started or something else has happened.

I know you need a password for Fitbit pay, not sure if you can set it up to wake it up with a password.
Have a look in the manual.

Set up device lock Device lock is available on watches that support Fitbit Pay. To help keep your watch secure, turn on device lock in the Fitbit app, which prompts you to enter a personal 4-digit PIN code to unlock your watch. Device lock is turned on automatically when you set up Fitbit Pay to make contactless payments from your watch. If you choose not to use Fitbit Pay, device lock is optional.
