Hi. I've been experiencing this issue for a while and haven't had any joy restarting both phone and versa/closing app on phone as has been suggested before.
I'm running firmware version 32.70.8.0 and fitbit app version 3.21 on a galaxy s10.
When I start an exercise the versa gets stuck "connecting ". I get the "connected gps is running" notification on my phone but on further inspection it is just stuck too (swirling circle). Sometimes I get connection but it is lost during exercise and I only realise at the end - really frustrating.
Does anyone have any advice for things I can try?

Normally I would restart the phone. What phone are you having issues with @Bibblesquash?
Does you Fitbit have permission to run in the background?
Does GPS link up with the Fitbit app opened?
Sorry I'm looking to find out the extent of the problem.
