My versa 2 is showing my sleep data but has stopped giving me a sleep score and full breakdown. It did once (I’ve only had it a week) but then nothing. I’ve tried logging out and checked all my settings but can’t find a reason why it has stopped.

Please note that you must see sleep stages to see Sleep Score. There are some factors that can affect sleep stages. Please visit this article, open the menu "Why don't I see sleep stages today?" and follow the instructions.
In addition, you can restart your watch by following these steps.
