For some reason the Sleep Mode option in the settings menu is greyed out even when it is not in sleep mode. I would like the change the time range for Sleep Mode but there is no access to do so.

Hi there, @Ceejayc14. Welcome to the Community Forums. Thanks for the details provided in your post.
It does seem that your Versa is in sleep mode. Maybe previously set up a sleep schedule and now your watch is during that period? With that being, I'd recommend giving your watch a few hours to see if the sleep mode is readable so you can adjust the sleep schedule. For more information, see How do I navigate my Fitbit device?
If the above doesn't describe your issue, please try to restart your Versa as suggested here How do I restart my Fitbit device? If the restart doesn't work try to change your clock face. If this fixes the issue, you can change your clock face back to the original clock face.
