I get this message 'error connecting to versa 2' every time I attempt to open the fitbit wallet or open security settings to change pin. It will not work. I've tried disconnecting the device, deleting and reinstalling the app, resyncing... Nothing works. Please help!

I'd like to follow up and help you with your Versa 2 since it shows a "Error connecting to Versa 2" message. By the way, thank you for troubleshooting this issue before contacting our forums.
Please try a factory reset. To do so on your device, follow the steps below:
After this, try setting up your watch from scratch as described in this help article and see if the issue gets fixed.

Thanks you for your suggestion JuanJoFitbit, I had the exact same issue. But in trying the process I accidentally just restarted my Versa 2 which solved the problem. 。◕‿◕。
