Versa 2 isn't tracking my km and speed on bike rides

I've turned on the GPS and don't bring by phone with me but I don't think that should be the issue.  Any suggestions?

Your Fitbit Versa 2 uses the GPS sensors on your phone to capture GPS data. In order to have distance and speed of a biking activity, it is necessary that you bring your phone with you to have internet connection. Please follow this guide to track activities with your Fitbit watch.
