Versa 2 touchscreen non responsive after latest update - hard reset&factory reset not fixing issue

My girlfriend's Versa 2 has been rendered mostly useless - no touch screen functionality after update. She thinks it started before she updated it a few days ago (it's the recent update that changed the UI in the app), but regardless when I factory reset it, the touch functionality worked until it was fully updated and "ready".

We've tried repeated resets, changing watch faces, and the factory reset.

Does anyone have any ideas as to what to try next? Mine has remained unaffected and is in working order.
