My Fitbit Versa 2 is recording stairs climbed as high as 300 for the past two weeks now.  Tried to reset and update the app.

Thanks for your post and for trying some troubleshooting steps before posting over here, seems odd that your Versa 2 is tracking such amount of stairs climbed. To better assist you with this, can you please let me know when was the first time you experienced this situation and how many times since then? Is this happening with floors only or other stats are also being affected? In the meantime I receive your answers, please check the information that's specified on our help article: How does my Fitbit device count floors climbed? and
