I have to restart my phone (Samsung A32) everytime I want to update my fitbit.  If I don't restart my phone, the update don't work.

To better assist you, I would like to confirm if by "every time I want to update my fitbit." you mean syncing your Fitbit? If that is the case, please make sure that your Samsung A32 meets the requirements listed here.

If your phone does meet the requirements to operate properly with the Fitbit app, please see Why won't my Fitbit device sync? 

However, if you're referring to update your Versa 2 to the latest firmware update, see Why can't I update my Fitbit device?
