For some reason the past couple of nights my Fitbit hasn't recorded my sleep. Any idea on how to fix it?

Please restart your Versa 2 as described in this help article. After this, check out this help page, which explains how your Fitbit device tracks your sleep information.
Finally, monitor your watch and see if it records your sleep properly.
