My fitbit will sync for 12 to 18 hrs then loses connection with my phone/fitbit app. I have to factory reset the versa 3 and delete the app and restart almost every single day. Each day I have to restart it does an update. Why!?

It's fairly common for devices to lose connection occasionally. If they are too far apart, this can happen, but I suspect you've already considered that.
Let's try this: the next time your device loses connection to your watch, turn off your phone's Bluetooth, force close the app, and while Bluetooth remains off, restart your watch. Once it restarts, turn Bluetooth back on and open the app; it should begin syncing.
The update you mentioned is likely due to the daily factory resets you've been performing. Since you're erasing all device data with each reset, this also removes any updates. When you set up the device again, it needs to download the latest available firmware.
