I'm English and in the UK - my fit bit since last week has been stuck on Venezuelan.
I keep changing it on phone/laptop on the website version of fitbit dashboard as that's the only place it will let me change the language. I see it let me press United Kingdom/English instead of Venezuelan, the page refreshes and then it goes back to Venezuelan again 😞
I can't read any of the updates on the watch which i use all the time so this is proving super annoying, nothing i've tried so far has worked.

HI @keeleydw94 - it would seem that the watch isn't syncing. When you make a change the watch doesn't know about it if it can't sync and pick up the new settings.
Try holding the watch button for 10 seconds till it vibrates and the logo appears and wait for it to start. Then after changing to England sync the watch.

Hi there, @keeleydw94. Welcome to the Fitbit Community Forums. It's sad to hear that your Versa 3 keeps reverting back to Spanish despite all the steps you've tried so far. I understand how you must be feeling at this point. I appreciate all the details you've shared in your post, we'll do our best to help you with this.
As @Guy_ has mentioned, please make sure that your Versa 3 is syncing. I'd suggest syncing your Versa 3 before changing the language and then sync right after the changes so everything all together syncs correctly.
