I've paired the versa 3 and it has worked before, but now it won't update and is stuck on the, " download the Fitbit app" screen. I've been on the app and the watch will not get off that screen

As per the message on the watch's screen, it seems that your Versa 3 is asking you to pair it again. So I'd suggest doing the following:
If you can't get started with your Versa 3, usually a missing requirement is the cause. Carefully review the requirements provided in the help article Why can't I set up my Fitbit device?
