Hi there, @JimAtko. Welcome to the Community Forums. Thanks for trying to troubleshoot the issue with your Versa 3. I understand where your concern is coming from.
As @Guy_ has mentioned, your Fitbit device may show an incorrect time if it hasn't synced or has been unpaired from your Fitbit account. Your Fitbit grabs the time of the device you're syncing with.
While reading your post, I was wondering if you're using just your iPad to sync your Versa 3 or you have any other mobile device you're using too? If you're, please note that you can use both, your iPad and the other phone. However, if you want to sync your Versa 3 with these two devices simultaneously, is very important to turn off the Bluetooth on one device when you want to sync with the other.
Bear in mind that your Fitbit device can only talk to one device at a time. It can be trusted on many devices, phones, tablets, and so on, but because of the limitations of Bluetooth, it will only be able to talk to one at a time.
The data from your Versa 3 is sent to the Fitbit cloud. After the data has been processed it will be put into your Fitbit account. Now your Fitbit account has access to and will display the data. Opening the app on a second device/phone/tablet will have access to the same data and a sync is not needed if a sync recently occurred through a different device.
For more information, see How do I set up my Fitbit device? and/or How do Fitbit devices sync their data?
Last but not least, make sure that both devices meet the requirements listed here for your Versa 3 to properly sync.

Hi @JimAtko - if your watch isn't syncing then it can't set the time correctly, so that is the secondary problem.
Often restarting the watch and iPad will resolve it [presumably it is not connected to a phone too, if it is that could be a problem].

I was told fitbit can only sync to one device. If my iPad and phone are near each other rhe fitbit gets confused and I have to take the iPad off blue tooth to sync to phone Then the new data will show on my iPad too
