I’ve ensured both the Fitbit app and the device (version 33.1.30) have the latest updates however when setting up I can’t install the Spotify app.

Please note that the firmware version you mentioned is an old one. The most recent version for Versa Lite is 38.70.8.0 (Fitbit OS 4.1.3). To update your watch, please see: How do I update my Fitbit device?
