We use the elliptical machine, the rowing machine, the stepper, the stationery bicycle and the treadclimber. How should we be using the Versa with these machines? I guess steps is not the best measure - is active minutes? Do we select one of the exercises? Best to let it auto-recognize? Would appreciate any hints.
Also is there something that explains how the Versa tracks activity on these machines?
Thanks.

For how to use the exercise app, see How do I track my workouts with my Fitbit device?
I try to stay away from auto-recognize to make sure to get credit for full time and to be able to choose my own activity name rather than relying of fitbit to recognize it correctly.
The above link explains what you need to know about how to select the activity.
If you are doing several of them in a workout and don't want to mess with settings in between, you could call it all Workout.
Otherwise, stairclimber and elliptical are available as options. For stationary bicycle, there is a spinning option, or some prefer to use bike, making sure GPS is not selected.
For rowing, I just go with Workout.
As for the best measure, there's no right answer. And it might vary if you are talking about measuring a workout or an all-day measure. Calories is probably the best measure, but steps or active minutes are easy to keep track of and are more comparable between people, whereas calories are going to vary greatly on a person's size.
Another useful measure to watch is hours with 250+ steps.
