My Versa can’t seem to find my iPhone under settings - Bluetooth - + audio device anymore. This worked just fine a couple of months ago... any tips? I use the watch to control the music in my fitness classes, and it’s soo annoying that it’s not working anymore.

Try to do a factory reset or remove your watch from your phone then reconnect it.
