I have had issues getting my Versa to sync with my Huawei P20 - they would only sync sporadically. When I tried to force sync my Fitbit app flashed the message "device not found". Phone app has been removed and re-installed. I've updated the Fitbit. I've restarted both and still they only "talk" when they want to. Now I've unpaired my Bluetooth with a view to pairing it again but I can't find a way of doing it, as my phone doesn't see the Versa. Oddly enough the app has still just synced with my Versa. What's going on? Problem started in earnest after latest Versa update.

I'm afraid that the Huawei P20 is not in the supported devices list. This is the reason why the syncing feature may not be working properly.
However, I'd like you to submit a compatibility request in our Feature Suggestions board and people can vote for it. The more votes your request gets, the more chances it will have to be reviewed by our engineering team.
