My Fitbit Versa records my 250 steps during the day absolutely correctly, but when I look in history on the Fitbit app they are all set at 0!

Ok the first thing I would try would be to uninstall the fitbit app from your phone and reinstall it again. If you are using Android you could first try clearing the fitbit apps cache before attempting the uninstall.
See if that makes any difference.

Can you confirm that your Versa is syncing with your phone? I assume you can see your total number of steps and they match with what your watch says?
