Has anyone else been having troubles with their Fitbit since this new update? It doesn't want to update on the Versa or sync with my phone. Plus now when you do a shut down on the Versa it doesn't want to turn back on. This is only a year old.

I've had issues too since update. For me, it doesn't track sleep. I've tried everything, but no tracking since 16/12/19. So frustrating!

If the Versa watches are not turning on, I'd recommend to restart them once again by making sure you're following the steps provided in the help article: How do I restart my Fitbit device?
Also, while reading your post I was wondering if the mobile device you're syncing with is included in our list of supported devices? You can see the list at: Which phones and tablets can I use with my Fitbit watch or tracker?
Please keep in mind that when a device is not supported we cannot guarantee its functionality with the Fitbit app. It might work at a certain time and then it can stop working out of nowhere after an update. This is because the app is not optimized to that device and any change could impact the performance.
If your phones are compatible, please follow the troubleshooting steps from the help article: Why won't my Fitbit device sync?

Yes, same issue here--no syncing. My Samsung, my iPhone, and my computer cannot find my Fitbit, so no syncing. It's a known issue -- it sounds like. I went through troubleshooting with Fitbit and nothing worked. They "logged" my case.
Randomly, it started working again briefly and now it's not (again). I still never have heard back since my case was logged and am anxiously awaiting an update.
