I happened upon this Fitbit page which describes how to set up intervals on various fitbit device, including the Versa.

https://help.fitbit.com/articles/en_US/Help_article/2100/?q=intervals+versa&l=en_US&fs=Search&pn=1

 

Unless the Versa was erroneously included on the page, it seems to have this ability.

I'm thinking that's just an oversight, or at least I hope so. There really is no reason not to include intervals on this watch. It seems like it's just an ionic minus GPS and payment on the base model.
