I have Public Preview v 4.67 (Charge 6, Samsung Note 20). I don't know if it's just the lag in transitioning or another issue. I haven't found any discussion on Mindfulness in Public Preview so wanted to post in case this isn't a lag issue.
I initially couldn't find Mindfulness data anywhere, then I did find Mindfulness option in profile > Fitbit settings> Preferences> Stress & Mindfulness. Here I can set number of days per week.
I eventually found a Mindfulness tile I could add via the Health tab (customize key metrics). Clicking this tile shows minutes, and from the day option, it shows activities. From the week option it shows data sources to be "entered by you" and "other" (not Charge 6 or Fitbit).
EDA scans from Fitbit device show up here, but only show heart rate change and session time, no graph, number of responses or mood logged on Fitbit device after scan.
The only way to initiate a Mindfulness activity (other that EDA from Fitbit) is to go to Sleep tab and access Sleep better library. If manually logged, it shows only session time.

From glimpses that I've seen, it appears that more customization is coming to the Public Preview version and includes Mindfulness. I'm not sure which app version will include this.
I saw that version 4.68 has started rolling out, so watch for it and install it when it's available to you. Or keep checking these 2 pinned posts which are regularly updated
