The app is still a work in process, so not all features from the general release are available in the Preview version.
You can leave feedback in the App, tap on your profile picture at the top right and select Feedback.

@SoftHearted if I tap the pencil at the upper right of the Today screen, I can add heart rate to the Focus Metrics in the next screen. This is a very new addition and I know that it wasn't there previously. Features roll out slowly, so it may not have come to you yet. If it hasn't, the only thing to do is to keep checking. It will come to you soon.

Hello @SoftHearted
As mentioned, the Public Preview app is a work in progress. Because of this, the team made it easy to switch back & forth from the Public Preview and the regular Fitbit app so you still have access to the "missing" features.
If you can see your real time heart rate in the regular Fitbit app, you can switch to the regular app when you do your workout so you can monitor your heart rate. When you finish your workout, you can switch back to the Public Preview.
