I am keen to fiddle with Fitbit apps.

Is there a way I can decompile//take a look at an existing app, to see how its all done?

Thats not possible. If it was, it would be easier to copy an app, and sell it as your own.

What you can do instead is to give a look to the excellent open sources apps that the community have made available:
