I just got a Sense 2 to replace my Versa 3 and it does take some time to adjust to the different layouts.
On the Versa, if I wanted to add/remove display screens from the layout, all I had to do was hold the screen I wanted to address and a menu popped up.
I cannot find such a feature on the Sense 3, can anyone point me in the right direction? Or at least tell me if that feature exists?

From the app, click on your picture in the upper left corner, then select your device. Look for gallery, then you should see "My Tiles".
You should be able to turn on/off tiles from there

I'm looking for the same thing (how switch watch faces with Sense 2) and looks like it doesn't exist from the watch itself, only from my iPhone. You said you figured it out. How?
And whole I'm at it, with my Versa 3 I could go back to a black screen just but pressing the side button. But can't find any way to go back to black screen except turning wrist down. Sometimes I like to use it as a mini flashlight at night and then turn back off once I see what I need to see but this Sense 2 doesn't seem to have that ability. And turning wrist doesn't work because I already turned forward using it as a flashlight to grab my water on nightstand or whatever. Anybody know how to manually go back to a black screen?

Yes, I can do that (from the app). But with the Versa 3 If I put my finger on the watch screen itself for 2 seconds the different watch faces would show up and I could switch to a different face from just touching my watch itself. In the end it was sort of a pain at times because in the shower the water would cause it to click on. But still was a feature I used here and there. That's what I thought you were asking about. Thanks for taking the time to share!
