Moving to Pixel watch - what about the data

I am thinking of moving to the Pixel watch and maybe keeping the sense for sleep analysis. Will the data transfer or do I basically have to start over with it reassessing me? Also if I decide to remove the Sense from my account and add the Pixel watch on there does that delete all the data from the Fitbit account? All my history?

No, your data is stored on Fitbit server so you can use Pixel Watch with your current account and the data will still be there. Using Sense and Pixel Watch simultaneously on one account isn't possible. You will need to remove one to add another. Doable but a major chore.
