Each morning it takes multiple sync attempts to get app and device in agreement. I discovered that rebooting the watch usually fixes this more quickly than other solutions, so if sync lags, I just reboot the watch. Two days in a row now, the reboot has hung. I get the fitbit icon pop up, then nothing. It just hangs there, and may take several more reboot attempts to bring the system up again. Anybody understand what is going on here?

Thanks, @guy. I just restarted my phone, but had already gotten synced through other means, so I won't know right away if that did any good.
I may have two separate problems. The sync problem happens in the morning when I'm trying to crunch my sleep data and get last night's data to display on my watch. It may take multiple syncs to get everything to my phone, but it does show up. Then I look at my watch, and nothing is displaying correctly (no sleep score or stress score). Sometimes if I scroll back and forth between screens it will sort itself out, other times not. If not, I reboot the watch. That typically fixes things, and it will be fine the rest of the day.
The second issue is that the reboot sometimes gets stuck. It just sits there displaying the fitbit icon. It may take multiple attempts to get the thing rebooted, but then last night's data shows up. Fortunately this second problem didn't occur this morning. The multiple syncs and scrolling did the trick.
I am thinking it shouldn't take all of this fidgeting to get my data shared and displayed, but perhaps there is a communication problem with my phone. I don't know. I am also thinking that the reboot hanging may be an ominous sign for the watch. I hope it doesn't just die one of these times!

@sgbednar- have you tried logout of the Fitbit App, clear the storage cache, swipe off and force stop it, then restart the phone. This will clear some app problems.
Failing that removing the Sense 2 Bluetooth may help when you log back in to create a new instance. The app should show you pair and link prompts. If not head to the phone home screen and you may get a sync popup, click on it.
Failing that run "+ Set up a Device" and replace, this will reconnect things.
see also Why won't my Fitbit device sync?
As this is a new watch the Fitbit App still has some kinks in it, and it's important to use the latest. Also check which firmware you have on the watch - What's changed in the latest Fitbit device update?

@Guy_ thank you! It seems I got an update last night, because several things have changed, and my sleep data was waiting for me when I got up. No fidgeting required! I hope this pleasant trend continues. 🤞
